Lemon and speculoos cake with thermomix or without

Today, I have for you a very simple gourmet cake that should allow you to brighten up your taste: lemon and speculoos cake (with thermomix or without). Spotted at copsandpop, I found it both simple and sophisticated. As for the alliance of flavors: very successful.

The zest of an untreated lemon
150g sugar
150g of ointment butter
4 eggs
250g of flour
1 sachet of baking powder
20 speculoos

Thermomix
Preheat the oven to 210. In the bowl, place the butter, sugar, lemon zest and eggs for 2 minutes, 3. Finish with the flour and yeast for 30s, 7 (your dough will be thick, it’s normal ). In a jacketed cake pan, pour a third of the dough obtained. Cover it with two layers of speculoos. Repeat once and finish with a layer of dough. Cook 35 minutes.

Without the thermomix
Preheat the oven to 210. Mix the sugar with the butter and the lemon zest. Add the eggs one by one. Finish with flour and yeast (your dough will be thick, that’s normal). In a jacketed cake pan, pour a third of the dough obtained. Cover it with two layers of speculoos. Repeat once and finish with a layer of dough. Cook 35 minutes.
