You can imagine, given my publication yesterday, that my pistachio paste was going to serve me quickly … And presto, I slipped a spoon in pistachio flans with agar agar (thermomix or without ). It’s a shame that the backlight does not allow you to see its true color. (That said, if you find the blanks a bit fluffy, add a drop of dye: D)
For 3 blanks
1 tbsp homemade pistachio paste (20g)
10g brown sugar
1g agar agar
Place all the ingredients in the bowl for 5s vit 10. Then program 10mn, 90, 3. Place in the flan molds, cool overnight.
In the casserole
Place the milk, sugar and pistachio paste in a saucepan. To heat. Then add the agar agar until boiling. Continue cooking for one minute (remember to cover to avoid projections!). Place in the blank molds, cool, overnight.
